Arwen – 1/28

Geez, it’s been a loooong couple of weeks.  I’m not going to write about exercise other than to say I’ve been very proud to have been going to kickboxing a couple of other random gym trips during all the crazy.  That was good.

Arwen – 1/14

I went to the gym this morning and did 30 minutes on the stationary bike and did extremely minimal free weights for arms…  Nothing too exciting, except for listening to a funny podcast and watching some of Obama’s news conference while I was riding.  I also was riding one ofthe super recumbent old people bikes instead of the ones that you actually sit up on, which was funny at first when it was me and three 70-somethings all in a row, but they left after a while.  Too bad, because I was digging it.

Also, I made SUPER easy (and very yummy) quinoa-stuffed peppers tonight:Image

Easy peasy recipe, and I only ate one pepper half (probably because I was munching rice crackers & carrots before) and will get to have it for two or three more meals this week!  I also think it would be good without the enchilada sauce, but I happened to have part of a jar and figured it would taste good.

Quinoa Stuffed Peppers

Bring ½ c quinoa and 1 c vegetable broth to a boil.  Boil 5 minutes, then cover and let steam for 15 minutes.

Cut two bell peppers in half and remove cores & seeds.  Microwave 2 minutes.

When quinoa is cooked, combine with ½ can black beans, ½ can fire-roasted tomatoes, ½ can green chilis (or use 1/2 can tomatoes & peppers instead of tomatoes and chilis separately), ¾ tsp cumin, 3/8 tsp chili powder, salt, and pepper.  Spoon quinoa mixture into the peppers.

Drizzle enchilada sauce in the bottom of the pan.  Cover all with foil and bake at 375 for 25-30 minutes.  Remove foil and cook 5 more minutes.  Top with a little cheese (add before final 5 minutes) or sliced avocado.

Yum!  And mostly improved/adapted from other recipes, woo!

Also, I found a surprise ingredient in the Trader Joe’s chickpea salad that I was having for lunch today…

Patti 1/7 to 1/13

Since it was the first week of classes at the “new” University (Georgia Regents University Augusta!) things were rather hectic and I was definitely not as good as wanted to be. I did, however, try to gradually change some undesirable eating habits, with a little success, and also managed to explore the workouts on the Xfinity On Demand sports and fitness channel– what a great resource!

I started out slowly, of course, thinking that I would probably just die if I threw myself into a long, hard, and probably discouraging routine. So I found a nice, easy 12 minute 1-mile walk to get the ball rolling. It was perfect! Today, I decided to branch out a little bit, and found a 27 minute one that was billed as a “two-mile walk.” WOW. Am I out of shape! Ms. Kendra Kemmerley (the instructor on the two videos) sure turned up the cardio energy level for this one! Although I occasionally wanted to just give up, I hung in there and worked up a good sweat and burned a few calories. Success!

OK, I have an engagement with the Crawley family in just about four minutes, and it would be improper to be late, so I’m off!

Arwen – 1/6 to 1/13

Definitely tried out kickboxing this week, which you already know, but I need to write a first post and that seems like a pretty killer thing to start it all out with because I thought it would be scary but I went anyway and it was soooo fuuunnn!  I felt tough.  I probably just looked stupid.  But I FELT tough.  Like the chick in this picture.Image

It was super tiring, but I was all endorphiny and excited afterward.  I’m going to go back on Tuesday for sure!

So that was fun.  I was going to go to a strength class on Thursday between work and choir, but I was feeling pretty busted so I didn’t.  I did go and do the elliptical for 30 minutes before work on Saturday and actually had a lot more energy than usual for my shift. 🙂  I walked around NW Portland after church today (probably just a mile or so), which was also nice!  So that was my week!
